3 Ways To Enjoy Tempura Prawn

In this recipe, we will teach you how to make Tempura Prawns, Tempura Vegetables, Udon Noodle Soup and Inari Sushi. Using the Udon Noodle Soup as the main course, you can choose from 3 different types of sides.

Ingredients

  • 100ml Katsuo Tsuyu (Concentrated Soy Sauce)
  • 500ml Water (1:5 Ratio Udon Soup)
  • Sanuki Udon
  • 100g Tempura Ko
  • 160ml Ice Water
  • 10g Breader Mix (Seasoned Flour)
  • 6 Raw Prawn Cutlets (Size 13/15 or above)
  • Oil for deep frying
  • 1 tbsp Chopped Spring Onion
  • 2 pcs Inari Sushi No Moto (Fried Bean Curd Pockets)
  • Sushi Rice
Other Ingredients

For Set 1 (vegetagbles) you can add on the side (Sliced into thin large pieces):

  • Mushroom
  • Beans
  • Eggplant
  • Kumura
  • Carrot
Tempura Dipping Sauce

(1:2 Ratio Tempura Dipping Sauce)

  • 2 tbsp Katsuo Tsuyu
  • 4 tbsp Water

Method

Preparation time: 15 minutes

Cooking time: 10-15 minutes

  1. Start by heating half a pot of oil (enough to fit the prawns and/or vegetables that you're frying) on high heat.
  2. Combine 100g Tempura Ko and 160ml Ice Water for your batter.
  3. Prepare the prawn by lightly marking the belly of the prawn with a knife. Flip the prawn over and gently flatten the spine of the prawn, making sure the prawn stays in one piece.
  4. Batter the prawns in Breader Mix first, then the Tempura Ko and ice water mixture. Once you batter the prawns in the Tempura Ko mixture, it has to go straight into the frying oil, so make sure your oil is ready. To check if the oil is ready, you can drop a pinch of the Tempura Ko mixture into the oil and if it sizzles, it's ready.
  5. The prawns will float when it's cooked through (you can leave it in a little longer for the extra golden look).
  6. Prepare the udon soup with 100ml Katsuo Tsuyu and 500ml water in a pot. Bring to a boil.7
  7. Add the Udon Noodles and cook for 2-3 minutes.
  8. Remove both Udon Noodles and Soup into a bowl for serving. Place 2 Tempura Prawns and 2 Fried Bean Curd Pockets (Inari Sushi No Moto) on top the the Udon Noodles.
  9. Enjoy!
Set 1 (Tempura Prawn Udon with Vegetables)

Fry the vegetables along with the Prawn by only battering the vegetables with your Tempura Ko and Ice Water mixture. When the vegetables have a nice gold coat, it's ready.

Set 2 (Tempura Prawn Udon with Tempura Mayo Prawn)

Squeeze a generous amount of Kewpie Mayonaise on top of the Tempura Prawns in a zig-zag pattern.

Set 3 (Tempura Prawn Udon with Inari Sushi)

Gently insert Sushi Rice into the fried bean curd pockets (Inari Sushi No Moto).
